Pocket Salmon

Happy Heart Health Month! We are celebrating in the Brown home by eating lots of heart healthy foods like organic berries and wild caught salmon. Here is a recipe that we enjoy and hope you will too!

Salmon Bake

A family member shared this simple and heart healthy recipe with us. They have replaced the green beans with asparagus and said it was fantastic!

2 4 oz. Salmon Fillets
2 handfuls green beans or 1 lb. asparagus, trimmed
1 lemon
Olive oil, as needed
2 heaping tablespoons green pesto
Sea salt and freshly ground pepper
Preheat oven to 400 degrees.
Trim the beans and halve the lemon.
Take a yard of aluminum foil and fold it in half. Bring the narrow sides together to make 2 layers. Put a handful of green beans in the middle of the folded aluminum foil. Lay a salmon fillet, skin down, across the beans. Spoon a healping tablespoon of pesto on top. Drizzle with olive oil. Squeeze the juice from one of the lemon halves over all and season with salt and pepper. Pull the edges of the foil together and scrunch to seal the parcel. Repeat for the second salmon fillet.
Place on a baking sheet and into the hot oven. Bake for fifteen minutes.
Remove and let stand for one minute before carefully unwrapping and checking the salmon for doneness. Enjoy!
