This Summer equivalent of my favorite winter root vegetables roasted with maple syrup. I am not sure I can call it a recipe because it is so simple. It’s more of an idea for tossing together a quick meal.
There are tons of meals I prepare throughout the year that have some similar ingredients, but taste completely different based on the in season produce we have on hand. This is one of those meals. During the winter I use yams, carrots, parsnips, winter squash and shallots instead of the summer vegetables. I roast them instead of grill. In the summer I use fresh colorful summer squash, bell peppers, onions and other quick cooking grill friendly vegetables I have on hand. We usually pair this with alongside salmon or chicken also cooked on the grill. It makes for fast, fresh and flavorful food.
Here is how you toss it together:
1/2 cup balsamic vinegar 1/2 cup maple syrup
Bring vinegar and syrup to a boil in a small sauce pan. Reduce heat and cook over medium heat for six minutes or until thickened. Brush vegetables with glaze. You can grill them immediately or let them marinade for several hours.
Note: Use real maple syrup. Corn syrup does not work well. You can find great real food such as real maple syrup and fresh organic produce on our Brown Box web site.
