Know Your Produce? Spaghetti Squash
Haven’t tried a Spaghetti Squash yet? You are missing out! It is one of the most popular winter squash varieties for several reasons. Most notably it’s unique spaghetti like shape and texture. It is also a staple for many grain free/low carb. menus and very versatile. We love winter squash like this variety because of their great shelf life (months!). If you don’t already have a collection of favorite recipes or would like to try something new here is a very simple and flavorful recipe to get you started:
1 medium spaghetti squash
1/2 cup grated parmesan cheese
1/2 stick butter
Salt and pepper
Directions: Place spaghetti squash in a baking dish and bake 45 minutes or until soft. Cut squash in half. Scoop out and discard seeds. Using a fork, scrape flesh in strings into a serving bowl. Toss with Parmesan and butter and season to taste with salt and pepper.
Serving Suggestions: Want to add meat? Grilled chicken or shrimp with olive oil and Italian seasoning is simple. Parmesan chicken is a little more work but pairs very well. Also pairs well with Italian Style Green Salad and French Bread.
