Cranberry Orange Muffins

Our first harvest of cranberries are here! The weather is starting to cool and my first thought is baking. With that in mind I wanted to share one of our favorite Cranberry muffins. Enjoy!

Bran/Cranberry-Nut Muffins

Ingredients
• 1 1/2 cup of oat bran
• 1 cup flour
• 1 cup flaxseed ground
• 1 cup of wheat bran
• 1 tbsp. baking powder
• 1/2 tsp. salt
• 2 oranges, quartered and seeded (or I have used orange juice)
• 1 cup brown sugar
• 1 cup keifer
• 1/2 cup of canola oil
• 2 eggs
• 1 tsp. baking soda
• 1 1/2 cup cranberries and nuts

Method
Preheat oven to 375. In blender mix oranges, sugar, keifer, oil, eggs, and baking soda. In bowl mix oat bran, flour, flaxseed, wheat bran, baking powder, and salt and set aside. Pour orange mixture into dry ingredients and mix until blended.

Bake 18-20 minutes or until done with clean toothpick.
