Weeknight Quick Thai Ginger Shrimp

I have loved Asian inspired recipes for as long as I have been cooking. This one is so quick and delicious. Enjoy!

Thai Ginger Shrimp or Chicken


1 cup vegetable broth

1 tablespoon cornstarch

1/4 cup soy sauce

3 tablespoons rice vinegar

1 tablespoon Thai chili sauce

1 T. minced fresh ginger root

1 t. minced garlic

1 lb. uncooked medium shrimp or chicken breast sliced thinly

2 t. sesame oil

3 T. chopped green onions

1 head bok choy, trimmed

2 cups basmati white rice, optional



  1. Cook rice according to the package directions if desired. 2. In a bowl combine the broth, cornstarch, soy sauce, vinegar, chili sauce, ginger and garlic. Set aside. 3. Meanwhile heat a wok and add the oil and shrimp/chicken. Cook until done. Remove and set aside. 4. Pour in the sauce mixture and cook, stirring continually until thickened, about two minutes. 5. Add the green onions and bok choy. Cook for five minutes or until the bok choy is wilted. Return shrimp/chicken to the pan and heat through. 6. Serve over rice if desired
