Lemon and Shallot Vinaigrette Dressing or Marinade

We love to include interesting and useful recipes with our box deliveries. This coming week all of the Variety Box menus include lemon and shallots so we thought it would be fitting to include a simple and flavorful recipe that uses these fantastic organic ingredients.

Lemon & Shallot Vinaigrette Dressing & Marinade

We love to be a part of your experience with real good food! Real good food is full of flavor and great nutrition. Great flavor begins with great ingredients. Herbs, spices, vinegar, oils and citrus are wonderful flavor enhancers for healthy cooking. One of the most common citrus used in cooking is lemon. Uses for lemon are endless, but we have included one simple dressing and marinade recipe below. This dressing is great over a green salad, as a meal over a green salad with grilled salmon, chicken or shrimp. It is also very good as a marinade for those meats. Directions: Whisk together room temperature ingredients:

  • 1/2 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon minced shallot
  • 1 1/2 teaspoons Dijon mustard
  • 1/2 teaspoon grated lemon peel
  • 1/2 teaspoon sugar
  • Pinch salt and pepper to taste

Local Cheese/Egg Update: Rolling Stone Cheese is temporarily unavailable due to a recent fire on the farm. We expect to have more award winning local cheese from this farm in approximately eight weeks. Our local egg ranchers expect more local eggs in two to three weeks. We apologize for any inconvenience as we substitute organic eggs from nearby for the local brown eggs in the meantime.
