No-Bake Energy Bites – Great with fresh fruit or Veggies

Thirteen years ago I saw my first “no bake energy bite” recipe in a book about raw food for little kids. Since then I think I must have come across at least a hundred different variations. One thing I love about this snack is that they are made with ingredients I have on hand always, they are super easy so the kids can make them and even though they are a treat they are made with real whole foods. They are really cute in a bowl surrounded with chopped apples or your favorite fruit as an afterschool snack. They can also be frozen so it might be work the trouble to make a bigger batch and have a snack ready later.

In a medium bowl mix ingredients thoroughly:

  • 1 cup dry oats (I always have old fashioned on hand)
  • 2/3 cup toasted coconut flakes
  • 1/2 cup peanut butter (or nut/seed butter of your choice)
  • 1/2 chocolate chips or cacoa nibs
  • 1/3 cup honey (agave or maple syrup work well also)
  • 1 Tablespoon chia or flax seeds
  • 1 teaspoon vanilla extract
Form balls and refrigerate for about two hours. Enjoy!
