Mediterranean Potato Salad

Dressing Combine: 1/4 cup rice vinegar, 2 tablespoons salad oil, 1/4 teaspoon all purpose seasoning, 1/4 teaspoon salt, 1/4 teaspoon pepper.
2 lb. Potato cubed
1/2 teaspoon salt
1 cup chopped peeled cucumber
3/4 cup halved grape or cherry tomato
3/4 cup chopped green bell pepper
1/2 cup chopped red/yellow bell pepper
1/4 cup chopped green onion
1/4 cup chopped red onion
1 can sliced black olives
1. In a large salad bowl whisk together the dressing ingredients.
2. Place the potatoes in a sauce pan and cover with water. Bring to a boil. Reduce heat and simmer for five minutes or until tender; drain.
3. Add potato to dressing in the large bowl. Toss to coat and let stand 15 minutes. Stir in remaining ingredients. Cover and chill. Yields 9 cups.
