Quick real food summer lunches are filling my menu this time of year. I love that this

Made with whole thin whole grain bread.
recipe is easy and takes only a few minutes to prepare. You can make it lean on thin sliced whole grain bread or delicious and more filling on a thick slice of toasted local sour dough.
To assemble:
- Place one piece of bread on a baking sheet.
- Top with a slice of tomato and a slice of your favorite cheese. We love local Ballard Cheese Greek Grilling Cheese or Gouda.
- Place on the grill or under the broiler until cheese starts to bubble.
- Sprinkle with chopped fresh basil leaves, balsamic vinegar, salt and pepper to taste.
