Grilled Vegetables with Lemon and Feta

This is a delicious and simple summer recipe. We enjoy it served with couscous, farro or rice. This recipe features vegetables in season early summer, but is adaptable to your palette and favorites of the season.

Ingredients:

  • 1 1/2 cups zucchini, sliced
  • 1/2 lb. asparagus, trimmed
  • 1 small red onion or half medium, 1/2 inch slices
  • 1 Tablespoon olive oil
  • sea salt and black pepper
  • 1 red or orange bell pepper, cut into 1 inch slices
  • 1/2 Tablespoon lemon juice
  • 1 Tablespoon olive oil
  • 1 cup halved grape or cherry tomatoes
  • 1/4 cup chopped Italian parsley
  • 1 green onion, finely chopped
  • 1-2 oz. crumbled feta or feta style cheese

Directions:

  1. Preheat the grill to medium high and brush with oil
  2. Toss zucchini, asparagus and onion with 1 tablespoon olive oil. Season with sea salt and black pepper.
  3. Grill vegetables, covered, until charred, 5-6 minutes.
  4. Remove from grill and chop into bite size pieces.
  5. Whisk together the lemon juice and olive oil in a large bowl. Add vegetables, tomatoes, parsley, scallions; season with salt and black pepper. Top with feta style cheese.
